In one of Turkey’s most widespread pizza networks, we established an end-to-end autonomous temperature monitoring ecosystem to guarantee product quality and food safety. Operating simultaneously across hundreds of branches, this system digitizes the entire process from raw material storage to the preparation stage, providing an audit mechanism free from human error.

Operational Process Challenges

  • Manual Measurement Error: The workload and data reliability risks created by manual temperature measurements performed by personnel multiple times throughout the day.
  • Critical Point Tracking: Preparation lines (Makeline) and cold storage units remaining vulnerable to instantaneous changes.
  • False Alarm Fatigue: Unnecessary alarm traffic in systems caused by natural temperature fluctuations during cleaning or while a branch is closed.
  • Audit Difficulties: Transparency and reporting setbacks in audit processes due to retrospective data being kept on paper.

What Have We Achieved?

The upper and lower sections of preparation lines and main storage areas were brought under digital monitoring with second-by-second data.

2. Smart Alarm Management

Thanks to the advanced alarm module, filtering was applied based on the operating hours of the branches; “false alarms” during non-operational hours were completely eliminated.

3. 100% Data Integrity

By ending the manual recording process, all data is securely stored on the cloud, enabling instantaneous retrospective reporting.

4. Active Risk Management

Product waste was prevented through instant notifications sent to relevant units the moment specified critical temperature limits are exceeded.

Implemented Solution

The system’s technological infrastructure was designed with a wireless and flexible architecture to fully adapt to the fast-paced and demanding physical conditions of restaurant kitchens. At the heart of the operation are industrial BLE sensors that require no installation, offer long battery life, and feature a waterproof, fully protected structure against washing processes to ensure safe use in high-cleaning areas like the Makeline. These smart sensors are easily positioned at every point in the kitchen, performing precise temperature measurements every 3 minutes and broadcasting the data using low-energy signals.

Our IoT Gateway devices on-site, which possess their own 4G/LTE infrastructure entirely independent of the branch’s existing internet network, listen to these broadcasts in real-time and transmit them to the central cloud platform. In the final stage of the process, this collected data is processed with advanced algorithms and transformed into instant tracking, temperature trend analyses, and digital reports fully compliant with legal regulations via a user-friendly management panel.
